Camargue is the western Europe's largest river delta.Approximatively a third of the Camargue is either salted lakes (in French étangs) or marshlands.Since Roman era exists a major salt harvesting industry.More than 34000 acres on the eastern corner(Salin-de Giraud) and on the western corner(Aigues Mortes area)are devoted to the salt production,dried by the wind and the sun.
Some of this salt is used as table salt.The more gourmet is the:sel Fleur de Camargue ( flower of Camargue salt in French).Its name comes from the aroma of flowers,mainly violets that develops as the salt dries.
It is sold in small containers seale with a cork top and signed by the salt raker who harvested it!
