Fleur de sel,a gourmet salt from the South of France

                   Camargue is the western Europe's largest river delta.Approximatively a third of the Camargue is either salted lakes (in French étangs) or marshlands.Since Roman era exists a major salt harvesting industry.More than 34000 acres on the eastern corner(Salin-de Giraud) and on the western corner(Aigues Mortes area)are devoted to the salt production,dried by the wind and the sun.

                   Some of this salt is used as table salt.The more gourmet is the:sel Fleur de Camargue ( flower of Camargue salt in French).Its name comes from the aroma of flowers,mainly violets that develops as the salt dries.

Fleur de sel
It is produced on the salt marshes near Aigues-Mortes,only from the premium top layer of the salt bed.It is a hand raked and harvested sea salt .Its small crystals dissolve faster than the ordinary salt.This organic sea salt,100 % natural is like its brother from Brittany,the salt of Guérande one of the more expensive salt.

                   It is sold in small containers seale with a cork top and signed by the salt raker who harvested it!
