Neufchâtel,heart shaped soft cheese

                                         Neufchâtel  Aoc cheese is a soft,mould-ripened,bloomy rind,unpasteurised cow's milk cheese made in Normandy in the rich dairy area of Pays de Bray.It is one of the oldest French cheese.One legend explains that its heart shape (the shape usually sold) is due to Norman women who wanted to express unobtrusively their feelings to the English soldiers during the Middle Age wars.

                         The production of this cheese is laborious with a long coagulation of around 36 hours.

Then the curds are not cut but poured into hung bags for 12 hours.This gives the cheese a grainy texture.Then the bags are pressed and left there for 12 another hours.The pastry is moulded (it may have  different shapes like small or big heart,square,big or small cylinder...), salted and the cheeses are placed in cellars until they have a white bloomy rind.The maturation takes 3 weeks and when aging,the rind may have red -brown patches.

                        Its texture and taste are similar to Camembert cheese.

                        Don't confuse it with the American Neufchâtel,a lower-fat cream cheese...
