Tome des Bauges with its rustic appearance and small holes

           The Tome (only one m) des Bauges granted since 2002 by an AOC award is only produced in the Massif des Bauges in Savoie which overlooks Annecy and the lake of Bourget.There are many Tomme cheeses in France with a name of a village or area,the best known being the Tomme de Savoie in the French Alps.

            It is a uncooked,pressed,semi-hard cheese made with only raw cow's milk of cattle(Tarine,Abondance and Montbeliarde breed)  grazing in this area.Wheighing 1 to 2 kg,it is 18 cm in diameter,5 to 8 in thickness.

            Very rustic in appearance with its thick grey-brown rind tagged with a green tag(fermier) or a red one(fruitier), it has a firm  straw colored paste with small holes and a nutty flavor.

At its best from April till September,its character differs according to the cow's food (hay in Winter,rich mountain grass in summer).

            I used to go often in winter in this area with my young kids where one can find small family ski resorts(Les Aillons).
