Taleggio cheese

         It is the creamiest member of the Italian Stracchino cheeses.Stracche in Italian means exhausted and Stracchino refered to the cows travelling back to the valley from their Alpine pastures and after a long journey still able to produce milk fit for making cheese.Taleggio was first made in the valley of the same name (Val Taleggio) located in the province of Bergamo in northern Italy.It has a PDO (Protected Designation of Origin) status under EU regulations and in 1988 was granted a Presidential Decree.

        It is a semi-soft washed-rind cheese with a rough,rosy crust (inedible) with a pale yellow and flavorful interior of creamy texture and has sometimes a pungent aroma when mature.Each cheese with a 48 % fat content is square shaped with sides measuring 20 to 25 cm with a thickness of 5 to 7 cm.The cheese,easily digested has a  sweet and delicate taste ,sometimes tangy.
