Ossau-Iraty has sometimes small holes
                                      Ossau-Iraty cheese is produced in south-western France near the Pyrenees mostly in Pyrénées-Atlantiques department.It unites 2 ancient provinces of France,The Pays Basque(Iraty) and The Béarn (Ossau).
                                      It is an unpasteurised,uncooked,pressed,semi-soft(or semi-hard as u want!) ewe's milk cheese with a natural grey or yellow-orange rind and a 50% fat content.It is produced exclusively with the milk of Basco-Béarnaises and Manech ewes,sometimes in mountain huts(Ossau-Iraty fermier).The maturing time is at least 90 days.
                                      Like a wheel in shape with a slightly convex or straight heel,it is produced in 2 sizes wheighing 2 to 3 kg and 4 to 7 kg.Its white paste which may have small holes is creamy and supple when young but becomes more firm when ages.It has a nutty and earthy flavor.
