Münster cheese

       As with all the washed-rind cheeses,Münster or Münster-géromé ,a soft cow's milk cheese protected by an AOC has a strong penetrating smell and comes from the upper Munster valley in Alsace region,in the North East of France.Its name comes from the town Munster located 15 km West Colmar ( which is a contraction of the word monastery).Munster is an ancient cheese produced first by monks then by the peasants who used the cheeses to pay rent to the monks.

      The Munster cheese FERMIER is made with UNPASTEURIZED milk called crude milk(factories use pasteurized cow's milk).This process is not only used to tease our American friends but also to make a product of high quality,the pasteurization destroying some floral perfumes.

According to the cheese's size,the maturation in humid caves takes 4 weeks( common cheese of 300 g) up to 2 to 3 months for the larger ones.During this period ,the cheeses of a flat cylinder form are washed and brushed with brine and annatto.Annatto or Roucou is produced from the reddish pulp surrounding the  brick-red seeds of the achiote tree.It is commonly used in South America and Caribbean cuisines to color and flavor(my Brazilian daughter-in-law uses it daily in her cooking).

      This cheese of a 45% fat content  in dry matter is at its best in summer and autumn:the cheese should have a slick and shiny brick red rind (edible),a semi-soft creamy dough,a strong and penetrating smell and a strong tangy taste.
