MAROILLES AOC,a one-thousand-year-old cheese from the north

It is said to have been first made by a monk in the Abbaye of Maroilles in the VIIth century and then is one of the oldest French cheese.The production process is similar to those of Münster and Pont -l'Evêque cheeses.
It is sold in blocks of 13 cm square,6 cm thick and weighing 720 g but it has also 3 Aoc brothers of other sizes:Sorbais,Mignon and Quart.Its paste is golden and soft.Repeted turnings and washings eliminate the natural white mould and make the red-orange rind.It has a strong,tangy taste.
