Pouligny-Saint-Pierre,a pyramidal goat's milk cheese from Berry in central France

                                 The nickname Tour Eiffel comes from its distinctive,pyramidal shape ,beautiful on a cheeseboard,but with a sqare top.It is produced like Valençay in the region of Berry in central France,in Indre department and in the smallest cheese AOC area.

                                 This soft cheese with a natural mould rind has a aging time of two to five weeks for the best examples and is produced all year round(between spring and autumn for the fermier).

Pouligny-Saint-Pierre cheese ,golden brown in colour with a wrinkled natural mould rind

                                 This unpasteurised goat's milk cheese has a wrinkled rind ,golden brown in color sometimes spotted with grey-blue mould and a chalky,bright -whited, refined interior.It has a square base of 6,5 cm wide ,is around 9 cm high .Its pyramidal shape with a specific weight/surface ratio allows the cheese to breathe and ripen efficiently along its maturing period and contributes to its unique taste.
