Brocciu is a special cheese:it is the only Aoc Corsican cheese and its process uses whey (usually in all processes of Aoc cheeses the whey is discarded).It does not contain lactose and can be a substitute for the Italian Ricotta.
Its is produced with sheep or goats's milk:first the whey is heated,then salted and mixed with the whole milk,heated again,drained and the whey removed.The fresh cheese is frinished and immediately ready for consumption but it can ripen 2 days to one month.This white or pale ivory mild cheese has a strong smell of milk.
