AOC (Appellation d'origine contrôlée),protected designation of origin is a French certificate created to distinguish agricultural products like wines,cheeses,butters,cream,lentils,honey,poultry(of Bresse)... but also products from the sea and the forests,produced with strictly defined methods in a delimited and specific area or municipality and in a traditional way.
A product is qualified Aoc only when it results directly from both the virtues of the land (terroir) and from the traditional modes of production(savoir-faire,know-how).
The history of Aoc certification goes back as far the 15th century when the Roquefort cheese was regulated by a parliamentary decree.It was the first cheese qualified as an Aoc in 1925,the last one being the Gruyère of Comté.
There are 44 Aoc cheeses mostly made from cow's milk,2 Aoc butters(Isigny and Charentes-Poitou),one cream:from Isigny.
All Aoc cheeses are easily recognizable,an Aoc logo is attached to the rind,the wrapping or the label.
