Our Annual BBQ

Hard to believe it was already Thursday! This is usually the day we would get together and have our annual cook out at the hotel for whoever was around and enjoy the beautiful Ambergris Caye night. We are always a little better prepared but we managed to come up with a game plan that would work. Mark was going to take Mike and Michelle into town to buy stuff and Silvina and I were going walking earlier in the day so she could also check the area out.
As usual, we got a bit of a late start but made our way down the beach and into town. We were charged with getting the shrimp, vegetables, and seasonings. We had horrible luck starting out trying to find shrimp and hit about 5 stores before we finally found any. WHEW.
As we arrived, Mike and Michelle were hanging at the bar enjoying a beer. Apparently they got ribs and pork which were both marinading in Barrel One rum and Belikin Stout. OH YUMMY!! Silvina and I retreated upstairs were we left the shrimp and corn on the cob ears in the sink to defrost. I began deveining and skewering the shrimp while Silvina just looked cute (she freaks at the thought of cleaning the little guys but loves to eat them!!)
She ended up helping me skewer them as I deveined them otherwise we would've been there all night.
Like clockwork, we got the food down and the grill was ready to go. Poor Mike was back to being grill master this year since my ex and I split up and that was normally his assumed duties for the last 3 years. It's ok cuz Mike did a fantastic job and everything came out superb!! We had a fun night hanging out with a new couple who had just checked in the hotel and it was much more of a low key night than bbq's in the past.
Soon, it was already late and everyone was turning in for the night. We decided to call it an early night and get ready for the big day.....Halloween!!!! :D
