We slept in today so long that we didnt' eat breakfast until 11am! That certainly put cooking dinner on hold. We had planned on an afternoon meal, but we ended up starting a little later so that we'd be good and hungry by then. :)
It was my first time cooking the turkey and gravy! I used an easy recipe (http://www.recipezaar.com/Uncle-Bills-Method-for-Cooking-Turkey-46262) that uses scalding water to shrink the skin on the turkey to keep the juices in (I didn't have room to brine it this year - maybe next time). It was about 11 lbs, so it roasted, stuffed, for 3 1/2 hrs and was perfect! Meanwhile, of course, we prepared everything else (sweet potato casserole, mashed potatoes - another delicious recipe (http://www.
By the time it was all ready, we were starved! We must have scarfed it down in about 15 minutes flat! Mom remarked how it was kind of like a wedding: you plan and plan and prepare and prepare.... only to find that it's overwith in such a short time! Haha.... a delicious way to spend 15 minutes, though, if you ask me. :)
Pumpkin pie for dessert, of course, and we were too tired to build another fire. Tonight is sad, because I have to work tomorrow so this was my last day with Mom and Laura (until New Years'). They fly home tomorrow afternoon (hopefully first they'll consume some of our approx. 8 tons of leftovers). :)
