The Chef - Taught me the delights of lasagne but could never win me over with the idea of apple pie

Today was the kind of day,
You’d invite me around for tea,
Tell me about your weekend, the ladies,
Your new job in Mayo, and your family.

The laugh we had in the back room,
When I fell asleep and your dogs drank my glass of whiskey,
Through tales of windsurfing trips,
From Lahinch to Castlegregory.

You were the boy who made me proud of me,
You were the man who made me proud of you,
Those long drives out to Dun Laoghaire in the summertime,
Just to swim down at the Seapoints view.

We’d swim out up to the rock and back,
We’d swim until our “bits” turned blue,
Just to be out in your favourite place,
The middle of the ocean blue.

You taught me so much about so much,
The engineering stuff I didn’t understand,
But when you spoke, I listened,
‘Cos you were such a gentleman.

When I spoke and joked, you listened too,
Sometimes even giggled like a girl,
So go and rest in peace my friend,
Now you’re the ocean’s pearl.


Simon you were always much more than a friend to me, you treated me like a younger brother and thought me so much down through the years. You got me through some very hard times yet you always brought a smile to my face. I will miss you always and so will many others. All my love and wishes forever.
