Lucky Charm 5K Race
Well for St. Patricks Day this year, I cooked my Corned Beef and Cabbage and wore green. I didn't make it to any big celebrations. I am sure everyone has different ways they celebrate St Patricks Day. I cook Corned Beef and Cabbage every year! This year I made it a little different. All day in the Crock Pot with potatoes and carrots, then drained the juice at the end of the day and cooked the cabbage on the stove in the juice! Wow, what flavor. The cabbage stayed crisp and green too. I put an orange honey mustard glaze on the corned beef to finish the cooking process.
To make my St Patricks Day Celebration complete I competed in a little 5K race at the military base across town. There were over 450 runners and I placed 136 over all and 2nd in my age group. What a great day. Now I am really pumped up to run the Shamrock Half Marathon this weekend in VA Beach.
