Simpl Rice Soup With Eggs (Austria)

When I was a child my mom always cooked this simple rice soup with eggs when I was ill. Other than most Austrian dishes it doesn't have a sounding name, its just called rice soup.
I like this soup, beaucse its fast to cook and quite tasty as well. I cook it, even when I am not ill.
What you need:
Rice
Eggs
Soup
Salt
- First of all you boil some water (our soup), add already "cooked" rice (can be rice which was left over from another dish).
- if you have started with water - add some soup powder
- scramble the eggs (1 egg per person) and add it to the soupe and stir, so that it doesn't become one big blob.
Finished, the whole dish usually takes about 5-10 minutes. If you like you can add some vegetables as well.
