Preparing the fresh fish. The ones on the ground were alive.

Today we were booked onto a Thai cookery course at The Chiang Mai Cookery School.

First task was to go the local market.  This was really interesting as we had loads of weird and wonderful things pointed out to us.  We spent about 45 minutes here going from stall to stall being shown some of the ingredients we would be using today.

Back at school and we were straight into the cooking.  Before we made each dish we were given an excellent and funny demonstration by one of the chefs.  They made it look so easy.  Then it was our turn, we all went to our work stations and replicated what we had just been shown.  It was all very well organised.  All our ingredients were always out at our work stations when we came back from the demonstration, we then had to cook them in the right order.

  We did quite well.  After cooking each dish we had to eat it so by the end of the day we were stuffed - six dishes in total!  The menu was as follows:

  • Coconut soup with chicken
  • Thick Noodles with pork
  • Red Thai curry with fish
  • Stir fry Vegetables
  • Green papaya salad with sticky rice
  • Steamed banana cake

We feel a lot more confident now at using the basic ingredients of Thai food, such as fresh lemongrass, different kinds of chillies and ginsa, fish sauce, and limes. By the end of the full day's cooking we were pretty tired so we went home for a short rest.  We were soon out on the town again, calling for our Chang beers before going to the night bizaar to do a bit of haggling.  We are doing ok at this but could be a lot better, but we're sure we will get there.  We ate at the food court and had our cheapest meal so far at 100 baht - about 1 pound 50!
