the art of a philippine noodle soup which is BATCHOY! Apr 17, 2009
undoubtably batchoy is my favorite cuisine in the philippines! as soon as i tasted the soup/broth it brings heaven and it makes me feel always at home!

since the the philippines has so many influences from china and the art of noodle making, the filipinos perfected a craft of an original (which i mean taste, presentation and ingredients) philippine soup noodle.

batchoy originated to my mother's roots in la paz, iloilo city in the province of iloilo located in the central islands in the philippines.

the noodles used for it is called "miki" sort of like spagetthi noodles but thinner, softer and almost stringy but soft on the bite and yellow colored.

the soup base is from "exotic" parts of pigs and cows - like liver, spleen, kidneys and/or heart, sometimes chicken meat is also added into the soup base.

the noodle soup is served with topped crispy pork cracklings and spring onions.

there are several kinds of batchoy servings - the special which is the ordinary batchoy serving and the super special where they put fresh eggs on the top - either way, the soup is really good!

i was even surprised as me and ben (half english/half israeli and first time in asia) went to the philippines and i let him tasted this soup dish and he wasnt sure of the ingredients (hahaha) BUT HE LOVED IT! he rated it as 9/10! and it instantly became onf of his favorite cuisine in the philippines and in the world!

there are 3 restaurants/fastfood that serves and specializes in batchoy making, namely - ted's, casa ilongga and ilonggo grill.

so if ever you are in the philippines, do not forget to try one of its original philippine noodle cuisine! which is an art! the art of batchoy eating!

Well, I bought a book on the language - started reading it, then sort of randomly ended up in a Korean class, so Tagalog has taken a break ... but at some point I'll prob. start looking at it again. :)
