Waterville, Maine is not where you would expect to find excellent southern comfort food, which makes the Freedom Cafe all the more special.  The menu is "prix fixe" (another surprise for Waterville), one price gets you an entree with choice of vegetable (have the collard greens--really, you'll thank me) and starch (candied yams are delicious)dessert (lemon ice box pie!) and unlimited sweet ice tea or lemonade.  Offerings include barbecue meat loaf, jambalaya, catfish, beef brisket, etc., all cooked in innovative, healthy ways.

If you find yourself in central Maine, the Freedom Cafe is well worth making time to visit.  Note, it is only open Wed-Sat evenings!</p>
