I travelled New Zealand on 2001-2002 and easily found work at Atlantis Backpackers, a hostel in Picton (South island). Many hostels and farms are looking for workers, you can just walk in and ask - Kiwis are very friendly and will most likely do their best to help you.

You can also enter the WOOFing net (try to look up the website) - it's popular in Nz and Australia. Basicaly it's a list of farms looking for WOOFers - workers in exchange for food and accomodation.

I only worked in that hostel for 2 weeks but it was a memorable experience and a chance to get to know locals and rest for a bit.
