It´s Vermicelles season in Switzerland! Oct 27, 2010
What is Vermicelles? It is a pastry, a specialty from the south of Switzerland, made from chestnuts. Vermicelles are common in various forms throughout Switzerland.
Pureed chestnuts are mixed with butter, syrup, cherry water and vanilla sugar. The typical form of the chestnut puree is forced through a tube with a perforated plate at the end. This creates about 15 cm long "worms". The Vermicelles can be eaten either alone or with whipped cream and meringues. The once we had were meringues cover with these chestnut puree worms topped with whipped cream. It was very tasty, but very filling. I only managed to finish half of mine.
Another variant is Vermicelles tarts. If you don´t want to make the chestnut puree yourself you can either buy it frozen or in plastic containers.
