In a country obsessed with ham (see Museu de Jamon), Madrid has a surprising amount of vegetarian restaraunts. My favorite was called Chez Pomme. It's near the Chueca metro stop. They have an awesome menu of the day where you get an appetizer, meal, dessert and coffee or tea for a pretty cheap price.

Also excellent is El Estragon, near the La Latina stop. It looks like a little dollhouse and it can get packed so you better get there when it opens (I think at nine) They don't believe in reservations in Spain, so forget that. Also near there, in the same plaza is a little bar called Delic that is great too.
