Lagman is basically the Central Asian version of "udon". Lagman can be found all over Central Asia, with each region boasting its own distinctive style, but the Uyghur version of Lagman is said to be the best. Why? Well, I have not had enough Lagman to determine which Lagman is the best, but the Uyghur-style Lagman I had was astonishingly superb! It is served with a thick broth (beef, I think), laced with a subtle hint of chilli and plenty of vegetables. It is quite filling, so make sure to have some tea (preferably green tea) after Lagman.

In Bukhara, there is one restaurant that serves Uyghut-style Lagman. It is right across from the city's main bazaar.
