The China Kitchen - Front entrance to the China Kitchen, Hyatt Regency Delhi, New Delhi, India.
The China Kitchen - Again - A phone camera picture but I can assure you that these Dim Sum tasted way better than they look in this photo.
The China Kitchen - This is sub-standard picture taken with my Blackberry, but it does portray the dimly lit moood of the place. This the guest Dim Sum chef doing his thing behind a wall of glass.
The China Kitchen - Beggar's Chicken, China Kitchen, New Delhi, India.
The China Kitchen - My #1 recommendation for your first visit is the Beggar's Chicken, which is baked in a shell of clay that you break with a mallet when it comes to your table ready to eat.

Awesome Authentic Chinese Food in New Delhi Jul 19, 2011
I go to New Delhi on business a lot. I didn't discover this restaurant until my third trip to India despite the fact that it is tucked off of the main pool deck of my favorite New Delhi hotel, the Hyatt Regency Delhi. This was my fourth trip and I was not going to miss a repeat here. During my last outing I went for the Beggar’s Chicken, which is a small yard bird, intended for one, that is encased in pottery and baked. When it is done, the resulting work of art is returned to your table so you can release the chicken with all of its moisture and flavor with a mallet. Next time I go I will surely photograph this as it is a unique dining experience. This time I reordered the Dim Sum for which they are very well know across the city. This time, they had flown in a Dim Sum chef from Dongguan, China as an "exchange chef". His creations were unbelievable despite the fact that my picture does not do him justice. Besides the Beggar’s Chicken and Dim Sum, I also highly recommend the twice-cooked crispy duck and crispy tenderloin. Of course this is the type of place that you could pin the tail on the menu blindfolded and be completely satisfied with what you end up with. One of my favorites!!
