Great way to experience authentic Mexican market, cookery May 28, 2011
Susana Trilling has written a book, toured the US showing how to cook, but mainly trained thousands of people to cook moles and other Oaxacan dishes at her home in the countryside near Oaxaca. She took us to the Etla market where we sampled herbs, cheeses, ice creams, chocolates including 'con atole,' then drove us back to her home where we cooked a variety of dishes. I was particularly intrigued by her comal (a kind of skillet), made of ceramic yet placed over a wood fire, on which we roasted chiles, garlic, onions and tomatoes. Susana's personality makes it all work.
