A chef with ambition to rise above pub grub Jan 31, 2016
N48°25.756' W123°23.099' In August 2015 we chose as main dish roasted summer vegetable salad for CAN$14 with Haliburton farm's arugula, roasted crookneck squad & eggplant, harissa scented couscous, oven dried tomato vinaigrette, parsley garlic tahini drizzle. Presentation was done well. Lovely to see this food on the plate. The salad was excellent in its own right with well-selected vinaigrette. The couscous tasted very good in combination with the excellent tasting tahini. This fine dish had the ambition of gourmet food and possessed culinary quality many levels above the usually pub grub that fills stomachs rather than excited taste buds. Good combination with a nice glass of home brewed beer. Compliments for the chef.

Our expectation for the other main dish was very high. We chose the mutton burger for CAN$14.50 with feta, parsley chermoula, local tomato, pickled red onion, yogurt tzatiki, ciabatta served with hand cut French fries. The dish looked like different items suddenly landed on one plate by accident. The ciabatta took centre stage, while the burger should be the main attraction. The fries were very salted, not necessary when salt can be added afterward. The ciabatta was hard and unnecessarily roasted. The Greek accents with tzatiki and feta were totally disguised. The feta on the homemade burger, which lacked flavours in itself, did not add anything and the tzatiki on the ciabatta revealed itself to late, although it gave the taste buds a sudden pleasant sensation. This chef made an effort to do something different with burgers, but his reinvention clearly overshot the target. No compliments.

We were pleasantly surprised and at the same time disappointed in the culinary adventures of the chef. We applaud every attempt to deliver more than the usual pub grub to excite our taste buds. Keep the excellent summer vegetable salad, but go back to the drawing board for the burger.
