Perhaps the greatest triumph of Balinese Cuisine is smoked Duck or bebek betutu.The tender.subtly flavored meat is unlike anything else in the world,imbued as it is is with a medley of fragrant leaves,root and spices. Traditionally, the cavity is packed with a suitable bumbu (is an amalgam of spices pounded together) before wrapping the duck in banana leaves or coconut bark and smoking it under a terracotta lid over smoldering rice husks and coconut fibers for eight hours (modern corner-cutters may bake it in an oven for half that time)
the result is a rich gourmet treat rare tasted by visitors,This is true festival food,to be ordered a day a head from selected restaurant or neigbouring village. Chicken can also smoked--so you can ask for ayam betutu If y take from the restaurant price range to 65.000Rp till 150.000Rp ( normally comes as packet together with rice,vegetable for two person). If you get time to visit night market you can try this food for only Rp.15.000 per porsi. So all choice are in your hand.
