Pufferfish: The Rare and Unique Japanese Delicacy Mar 30, 2015
Fugu or pufferfish is one of the most notoriously celebrated dishes in the Japanese cuisine. Organs within the pufferfish contain tetrodotoxin, a type of neurotoxin that is 1,200 times stronger than cyanide provided that there is no known antidote available in the market. There were victims who died 17 minutes after consuming the pufferfish. Hence, restaurants preparing pufferfish dishes are strictly regulated in Japan and several other countries. Only qualified chefs who had undergone more than three years of rigorous training are allowed to handle pufferfish. However, the potential lethality of pufferfish seem to have heighten its appeal to a certain market segment of consumers.
The chef at Sakae is a third generation sushi chef who also holds a license in preparing pufferfish. Sakae had previously appeared in several local Taiwanese newspapers and magazines. The chef had also personally championed a local campaign promoting egg sanitary in Taiwanese street food.
Types of pufferfish offered in this restaurant were of the Kanafugu and Shirosabafugu variety sourced fresh locally. In terms of texture, we discovered that pufferfish meat was closest in resemblance to frog meat. The meat was lean as it contained little fat but nevertheless very filling due to high protein content. Pufferfish dishes prepared in this restaurant were varied, innovative and refreshing. There were pufferfish sashimi, pufferfish skin sashimi with gold flakes, pufferfish steamboat, pufferfish tempura and more.
In addition, Japanese alcoholic beverages offered in this restaurant were numerous. A cozy location to hang out with friends after work. Excellent service. Waitresses were able to converse in English, very helpful and friendly. We had a wonderful evening and apparently still alive and kicking.
