Rm Seafood Las Vegas Reviews

I did not know much about rick moonen or rm seafood. but i am glad i went.
rm seafood has an upstairs and a downstairs restaurant. the downstairs was more of a sushi joint that was very casual. the upstairs was more formal, more business-type-ish.
we dined upstairs. the place was real sedate, given that this was in vegas. but, the food more than made up for it. the service was also impeccable -- complete with coordinating the presentation of each dish to each diner.
ok, on to the food.
the amuse bouche was pureed peas with caviar (fish eggs) on top. this was good, especially if you like peas.
my appetizer was a foie gras with fried cauliflower and fried pita bread. this was delicious. the foie was so incredibly fatty (in a good way), it was just sinful. it went really well with the fried pita bread and cauliflower. who knew cauliflower could be so good?
i also had the maine lobster (out of the shell) with parsnip and risotto. (there normally was a veal glaze but i asked that it be taken out.) the lobster was so buttery and yummy. the risotto was rich and yummy. for a lack of a better word to describe this dish, let me just say that this was yummy.
we finished off with a hazelnut torte, which, if you like nutella, was pure heaven. it was nutella times 1000.
i won't even mention the price. it was pricey. but it was very good.
