New Mexican Dining in the High Desert May 18, 2008
Rancho de Chimayo is a wonderful New Mexican syle restaurant about 25 miles north of Santa Fe. It is in an old hacienda, and has purportedly been in the same family since the first wave of Spanish settlers in this part of New Mexico in the late 1600's!

The restaurant has lots of cozy little dining rooms inside the hacienda with fire places that are perfect on a chilly night. It also has a great outdoor terrace for dining al fresco when weather permits.

A perfect meal at Rancho de Chimayo for me would be one of their great margaritas (or more, LOL), a cup of their tortilla soup, carne asada (8 oz. rib eye steak with a roasted green chile and melted cheese with an enchilada, frijoles borracho ["drunk beans"] and rice), and then either a flan or sopapillas for dessert. They have lots of other great New Mexican fare, American food for those that can't take the heat, and vegetarian dishes.

Although its a bit of a drive if you are staying in Santa Fe, it is in a gorgeous setting. Just to see the stars in the high desert is worth the trip out -- the food and margaritas just add to the experience.
