Tourist Mecca is Matt Molloys, bang in the middle of the main street (where I grew up, incidentally).  Matt used to play for The Chieftains so the emphasis is on traditional live music and there's something on there every night.  The front half of the bar has an olde world feel to it and although i've said it's tourist mecca it's not overly hackneyed or 'oirish' and there tends to be a pretty good vibe in the place.
For the younger crowd, there's Cosy Joe's down the street on the opposite side which seems to get larger every time i come home which is tastefully enough done - tends to have pumping music on the weekends.
I used to hang out a lot in Heneghan's up the street but it was revamped about 8 years ago and they completely changed the atmosphere - it used to be a bit of a hippy/grungy place and now it just seems a bit soulless but still gets packed on the weekends.
A nice little pub on James Street is Blowsers.  I think there might be a different name over the door but everyone knows it as blowsers.  Red shop front at the top of the street.  Management seems to have changed or something but it's not as friendly as used to be.

I loved Matt Moleys although it's not as big as you thought it would be. Only thing that irritates me about buying Guiness in Ireland is that it's not only more expensive, but you have to wait till all the bubbles settle and the guiness gets its jet brown colour before the bartender gives it to you (and collects payment).
