Can chocolate be art one can wonder but only briefly? Because finding yourself in the world centre of chocolate; Brussels, the answer is as obvious as water in the sea.
Chocolate is a big part of Belgian culture and Belgians love their chocolate. One the most famous chocolatier and performers of HAUTE COUTURE OF CHOCOLATE in Belgium is Pierre Marcolini and the place to be is the flagship store on Place du Grand Sablon in Brussels. The shop is a "maison de chocolats" where all chocolate lovers will find all his creations on display!
Placing a Pierre Marcolini creation into your mouth is an experience that often borders on the Absolute. The sometimes-audacious balance of flavours may astonish at first, but then it gradually comes to the fore so that we are surprised that we did not think of it sooner.
Pierre Marcolini is uncompromising when it comes to choosing the raw materials for his products and his approach is based on a never-ending quest for new flavours. Every year he travels the world (Latin America, Mexico, Madagascar, Trinity Island, etc.) in search of cocoa beans, the fruit that he uses as his logo.
Not satisfied with bringing back the best beans in the world to his ateliers in Brussels, this alchemist then subtly blends the beans from the different regions and works with original aromas to create unequalled flavours: ganaches made with teas from around the world, Origin “Crus” chocolate bars, etc. Pierre Marcolini manufactures his grand cru chocolate himself (coating) using cocoa beans that he selects personally. He is among the last five craftsmen working this way in Europe.
Pierre Marcolini has not limited himself solely to chocolate of course. He was Premier Belgian Ice Cream Confectioner in 1991, World Champion Pastry in 1995, and European Champion Pastry in 2000.
