What is a must in the Canarian cuisine are Papas Arrugadas. This is a name of small wrinkly potatoes tand eaten with the skin. They are served with the so called majo sauce. The basis of all mojo sauces is s lot of garlic. Together with olive oil, vinegar and salt, the basis for a simple mojo is done. Those who like it a little bit more hot can vary the mojo with red pepper in order to prepare a mojo picon. Often in restaurants before the main meal some mojo is served together with bread.
