I was a little surprised to read the news the museum of vinegar built in 1986 was closed on November 11, 2013. They will renew and open this museum in 2015. We visited this museum in May, 2011. Mizkan is a big company that produces vinegars, masters, salad dressings, sauces, Natto and other food products. This company was founded in Handa in 1804 by Matazaemon Nakano. The Sake industry once did very well in Handa. Mr. Nakano began producing vinegar using sake lees. It was cheap products compared with rice vinegar, so sushi was widespread throughout people in Edo period. And now Mizkan produces the top-brand sushi vinegar all over the world.
