After a four year hiatus the Kingsburg Crayfish and Jazz Festival reentered the scene in 2007. The 2008 edition, held September 20th was even better, with a few oddities, with plenty of vendors selling crayfish dinners, crayfish cakes, crayfish soup and this year alligator dishes. One unexpected glitch came when the biggest alligator vendor, who came all the way from Monroe, Louisiana, ran out of food. The chief cook had to leave to get more and the poor assistant was left to explain the delay to a line that refused to go away. Word had gotten out about the food and people waited for over an hour to get a sample of it.
There are contests galore, like who can eat the most, and who can cook the hottest.
The jazz is presented on three separate stages several blocks apart so they don’t compete with each other.
The festival runs from early afternoon till about 10 pm.
