exceptional Gaziantep kebab off the beaten path Apr 03, 2011
This is a very modest kebab establishment located just below the citadel. It was my best dinner experience out of a 10-day stay in Turkey, which included many great dining experiences. Being the only tourist there both times I attended, the staff and patrons alike offered me a warm welcome.
The meat is cut and prepared on the premises, it is very fresh (kasap is turkish for butcher). The grilled meats were simply amazing. The pide bread which blanketed them is fresh off the oven from the bakery just up the street, and the grilled tomatoes, onions and peppers were cooked to perfection and nicely presented.
The meats came with a beautiful side of salad in a stacked oval plate, which included 4-5 different kinds of salad compositions (red cabbage salad, cilantro/onion/sumac, diced tomato paste etc). You use those to garnish the pide and meat. All these salads were delicious and went really well with the grilled meat, giving you a healthy and balanced meal.
The tavuk or grilled chicken was excellent. I came back for the mixed grill plate, called "porsiyon" (deriving from french for "portion"), which had minced lamb and fillet skewers (you pick your own pair, just point at what you want because the hosts don't speak much english).
The house ayran (yoghurt drink) was superb, really tangy and worked really well, soothing the palate from the spicy grilled pepper and providing a great counterpoint to the grilled meats. It was the best ayran I've had in Turkey. They probably used fresh goat yoghurt as opposed to supermarket yoghurt
The meal was an outstanding value, about 14TL for the mixed grill and 9-10TL for the chicken plate.
Overall, Kasap Yaşar was a very nice counterpoint to Antep's most famous restaurant, the more fancy and famous Imam Cagdas. The meal was equally good but significantly cheaper and the setting is very local and authentic. I can't wait to go back there!
