My ever preferred sea fruit is:

Gamba de Vilanova (aka Mediterranean red shrimps)

Mediterranian Red Srimps are really different than Atlanlantic, Pacific or Indic ones, they're smaller but the taste is really powerfull, we can say that the others are tasteless! Surely it's done because the Mediterranean sea is salty than the other oceans, that makes all fish tasty than the others

I recommend to buy it at the fish market (60-100 Euros/Kg)and cook it by yourself

A little but of olive oil and salt, grill them like 1 minute (30 seconds each side) it's enough

Also tastefull Navajas, Canaillas and espardenyes ( last one tasted at "El Bulli", Roses, Spain)

If the Sea food is really fresh, don't need sauces and also cook the minimum possible
