I just got back from Valencia. Spain (and Europe in general) are not as cheap as I expected because of the weakness of the dollar and the strength of the Euro.
However, I recommend the central market. It's a fruit and vegetable and fish market. You can pick up meal fixings relatively cheap. Plus practice your Spanish.
I think Valencia is a nice city to see a different kind of architecture -- not gothic but modernista. It's worth checking that out (and looking is always free!). Walk into the central post office and check out the ceiling stained glass.
