Excellent farm-to-table restaurant Jan 31, 2016
N49°16.088' W123°8.944' One of Vancouver's favourite farm-to-table restaurants is a lovely rustic-chic room of exposed brick, wood beams and prominently displayed red-rooster logos on Kitsilano W 4th avenue.

With four beers with exotic names on tap, we needed an informed consent. The server quickly presented us with four small glasses. One was too experimental in taste, so we went for the Belgium Strange Fellow Wit, knowing this kind of beer very well. It had a soft and fresh taste with lemon. The second beer, the Dageraad Amber, must also have had its roots in the best beer country of the world: Belgium. We enjoyed it.

Fable served their main dishes very fast during our visit in August 2015. This is a high-turnaround restaurant, but not a noisy one if you choose a table in the back. Also, choose your own dining-speed, as the server removed empty plates quickly. We chose as our main dish the wild BC salmon combination for CAN$24 with hummus, potatoes and yoghurt. It was excellent. Great combination of flavours. The Pacific salmon was excellent. Ten out of ten. The 5oz flat iron butchers' cut for CAN$27 with gai lan, smoked shiitake and bok choy salad was tasteful. The meat was prepared like pulled pork above a fire. Not greasy and very subtle in taste. We finished with a cheese plate.

Reservations are mandatory, but when we phoned Fable, they would not take reservations. Fable asked us to show up at the restaurant and offered us instantly a table if we would finish our dinner within two hours. This was no problem to us.

Fable is an excellent farm-to-table restaurant. Very recommended.
