Really Good Mexican Food Jan 14, 2008
Don't let the exterior fool you. The owners of El Jimador Dos (the original is in Montrose, CO) put plenty of money into the interior and the kitchen. The building housed an old country grocery store, and then several incarnates of various restaurants. The location is off the main drag, so they all failed. Until El Jimador. The food is not only good enough to overcome the location, but sets the standard for Mexican food in Brighton. This is tough to do, as there are a dozen others, all in 3/4 mile radius, competing for the Mexican Food dollar. Brighton is not a large town.
Every meal begins with complimentary chips, salsa, and a Mexican Cole Slaw. The Mexican Slaw is something special, and we regularly ask for a second bowl. I am fond of their chicken mole (Moe-Lay), but everything is good. They have the best tequila selection in town, with over 60 varieties on the menu. The initial service is always prompt, but the kitchen is sometimes a tad slow. Not enough to ruin a meal, but it could be faster. The food is served hot, and the waitstaff is very friendly and accommodating. The interior is done well, and is brightly lit. The atmosphere is very pleasant and you are always made to feel welcome, often by the manager himself. This is one of the three best Mexican restaurants in Brighton, and my personal favorite.
