Duma is a meat dish found in the Democratic Republic of the Congo. Essentially the meat is skewered through the centre (length-ways) of the meat, sprinkled with a lotes of spices and deep fried. This is definitely street food you will find in the markets here for about $1 or less. I did not have a chance to sample one, but 2 of my guides described it as very tasty. The meat is also naturally lean. If you are on a budget and want to really sample the local culture and cuisine then Duma is a must.

So what is the meat? Don’t read any further if you don’t want to know.

It is fried mice. I suspect that a rat would do as well.
