Diavola is all about pizza. But not your average pizza. On prominent display is their relatively rare ‘hybrid’ oven (I overheard these are built in Italy and beyond Indianapolis, NYC and Chicago are the sole other installations in the USA). This is an intense heat contraption which actually has your pizza ready only ninety seconds after being placed inside! There is much talk about how this treatment yields a superior pie, but I am no chef and the finer details escape me. It is a nice touch the oven sits in plain view so everyone may witness the beast in action.

Pizza is a bit heavy for me, so I ordered a salad which was excellent. Forget the name, but it had some unfamiliar pepper which was quite tasty. We ordered appetizers to share and these were all fantastic too. My companions at the dining table were all wine connoisseurs (I am not) and they were quite impressed with the selections available. I do enjoy beer, however, and their offerings revealed tasteful insight.

I got to sample the various pizza versions our group had ordered, and they were good, though I did not register anything unique from the hybrid oven preparation. The margherita was the best, and all were gluten free. Unfortunately I did not experience any “wow” moment that this was unique from previous thin crust pizzas. This is not to dump on Diavola, because it was very good, just a bit lacking given the hype.

Final points in Diavola’s favor. The setting and interior décor is well done, although acoustics were a bit of a detriment (i.e., hard to follow conversation with neighboring chatter). Service was top shelf – our waiter was intimate with menu and wine selections, conversant, friendly and attentive without being intrusive. Overall a satisfying dinner spot, if not a place I would frequent.
