De Prins is one of the few places I found in Amsterdam that felt like it could only be dutch. I perched up on a bar stool and tried to order hot chocolate in Dutch, got laughed at, and switched to English, with a ruefull "at least I tried!" After that, I knew it was going to be like being out in Utrecht. I sat in a corner and worked my way through another hot chocolate and a beer, and a plate of Bitterballen, and spent about 11 euros all told.
The place looks like a cafe ought to - big noisy coffee machine, mysterious sticky liquors, and cold, cold beer with a proper head. Nobody minded that I sat and read Hemingway for most of the afternoon, and by mid afternoon the place was almost full and had a great hum of happy people.
The food was nice, the staff were friendly - even if they did laugh at my Dutch - and the location couldn't be better. You should go!
