Cafe 118 Degrees - This is the 'lasagna' I had. I notice that there is a new version of this dish now with shitake mushrooms. The 'ricotta cheese' is made from macadamia nuts. And the sauce from sundried tomatoes and fresh tomatoes. The noodles are zucchini.

Healthy and Spectacularly Delicious Oct 18, 2012
Everything about this restaurant -- from the zen-like atmosphere to the carefully selected organics -- just radiates goodness. This is a vegan restaurant where nothing is exposed to heat greater than 118 degrees. That means no cooking! It also means no pesticides, processing or additives, and of course, no animal by-products of any kind. I am fairly food conscious and avoid many processed, chemicalized foods, but I am not a vegan or even a vegetarian, so when a friend invited me to try Cafe 118, I was a bit skeptical. Would a raw food meal actually be satisfying? There were five of us in my party, and we each ordered an entree and dessert and shared around the table. Every bite was delicious. I absolutely LOVED this restaurant. I wish there was one in my neighborhood. I had no idea that raw food could be so exciting. I highly recommend a visit. You will be amazed.
