Ready to be Brooklyn's Health Food Chef Sep 04, 2011
I’ve always heard that the key to being a good chef is learning how to properly use a knife. So I signed up for a Knife Skills class at one of the best recreational cooking schools in NYC—The Brooklyn Kitchen. I learned how to chop celery, carrots, peppers, parsley and the ever-elusive onion.
Also learned how to cut apart a whole chicken. After 2 hours I had the slicing and dicing skills of a samurai sword master (on their worst day).
Next up is a Cooking with Cast Iron class where you learn how to put the frying pan away and focus on making everything in a Cast Iron Skillet. After 2 hours we’ll have made Fried Chicken, Mac N’ Cheese, and Braised Collard Greens. Not the most healthy but it will allow me to learn the different cooking techniques in the skillet and apply it to my goal of being a healthy food chef on the side.
