For its tripes and aligot! Aug 24, 2011
After our visit of the Murol castle,we reached the village at half past noon and as all the restaurants were already very busy,we entered the first eatery and had there a quick lunch with a main and a dessert.

My wife enjoyed a light aligot with a Salers(traditional local cow) sausage.Aligot is a dish made in southern part of Massif Central(Aubrac) made from melted cheese,butter,fresh cream blended into mashed potatoes ,sometimes with garlic.

I had tasty tripoux or tripous, a dish made with sheep's trotters and veal tripe flavoured with various herbs.

The dessert was basic.

As I like to live sometimes dangerously,we washed our meal with a local wine,a CĂ´tes d'Auvergne Goubes made with gamay and pinot noir that may have a spicy aroma and a taste of berries and currents but I only recognize the taste of a plonk...It remembered me some Beaujolais...
