La base de este dulce tiene origen árabe y llegó al Perú con los españoles, también se fusionó con nuestros productos nativos y resultó el limeñísimo arroz con leche, con sus propios secretitos que lo diferencian del resto de países por su sabor y textura.

Su preparación es sencilla, en una olla se pone a hervir a fuego fuerte agua con cáscara de naranja, de limón, un poco de canela, clavo de olor, cuando rompa el hervor se añade el arroz y continúa cocinando a fuego medio, moviendo de cuando en cuando para que no se pegue, cuando el arroz esté tierno se vierte leche y pasas y cuando ya esté cocido se añade azúcar, se deja que rompa el hervor y se retira del fuego antes de que se seque la leche, debe quedar mojado, se agregan yemas de huevo previamente batidas con una copita de oporto. Se sirve en dulceras espolvoreado con canela. Buen provecho y a disfrutarlo.

Its preparation is simple, in a pot boil over high heat water with orange peel, lemon peel, some cinnamon, cloves, when boil add the rice and continue cooking over medium heat, stirring occasionally to prevent sticking, when the rice is tender pouring milk and raisins and when it is cooked add sugar, allow to boil and remove from heat before the milk dries, it should be wet, previously beaten egg yolks are added with a glass of Oport. Served in confectionery sprinkled with cinnamon. Bon appetit and enjoy it.
